Will the Word field functionality work with regular SharePoint lists and content types or only with external content types?

@jime: No, Word Quick Parts are not available for regular lists.
@SP-Videos: Was hoping subscription would give access to more advanced topics such as how to accomplish similar merge functionality with regular list data.
